Ingredients
60ml Gatherer’s Gin
30ml lime juice
15mls Lemon and aniseed myrtle sugar syrup*
30ml Coconut cream
3ml orange blossom
1 Egg white
Ice
Fever tree tonic water
Method
1. Add Gin, coconut cream, lime juice, syrup, orange blossom and egg white to the shaker
2. Dry shake thoroughly to combine
3. Add ice and reshake
4. Gently pour into a tall glass and top with tonic water and a garnish with lemon myrtle

60ml Gatherer’s Gin
30ml lime juice
15ml Cherry Shrub*
10ml simple syrup
3 dashes orange and mandarin bitters
4-5 fresh cherries
1 Egg white
Ice
3 Strawberry gum leaves
Method
1. Add Gin, lime juice, cherry shrub, syrup, orange bitters, and two strawberry gum leaves* to the shaker
2. place cherries in the shaker and crush with the muddler
3. Add egg white to the shaker, dry shake thoroughly to combine
4. Add ice and reshake
5. Double strain and slowly pour into a coupe glass, garnish with strawberry gum leaf

Ingredients
45ml Hunters Rum White Cane
25ml fresh lime juice
15ml Strawberry gum syrup* (interchange with any syrup)
6 fresh raspberries
4-5 pineapple sage leaves
Ice
Method
1. Add White Cane, Lime, strawberry gum and fresh raspberries to the shaker
2. Gently muddle to combine
3. Add 4 - 5 pineapple sage leaves and ice to the shaker
4. Shake well
5. Double Strain into a chilled coupe or martini glass and garnish with pineapple sage

60ml Hunters Rum White Cane
6 lime cubes
3.5tsps coconut sugar
Splash of lime juice
Fresh mint
Crushed ice
Method
1. Add lime cubes and coconut sugar to a tall glass,
muddle to release the lime oils
2.Add mint leaves to the glass – give them a slap
to wake them up before placing in the glass
3. Add crushed ice to the glass
4. Garnish with a slice of lime, or fresh mint.

15ml simple syrup (adjust to taste)

Method
1. Add all ingredients to the shaker
2. Shake well until the outside of the shaker is frosty.
3. Double Strain into a chilled coupe or martini glass.
4. Garnish with a lime

60ml Hunters Rum White Cane
90ml ginger beer
15ml fresh lime juice
Lime wedge, for garnish
Instructions
1. Fill a highball glass with ice.
2. Pour the ginger beer over the ice.
3. Slowly pour the White Can over the ginger beer to create a layered effect.
4. Squeeze in the lime juice, if desired, and garnish with a lime wedge.

90ml tonic water
15ml Fresh lime juice
15ml elderflower liqueur (optional)
Fresh mint leaves and a citrus slice, for garnish
Method
1. Fill a highball glass with ice.
2. Add White Cane and a good squeeze of squeeze of fresh lime juice.
3. Top with tonic water and stir gently to combine.
4. Garnish with fresh mint .
