Australian molasses, Kinglake rainwater, Specialty Barrels. 

Four years and two months in the making, this single-release rum has been aged to perfection, our barrels are carefully recoopered in house to fully customize the maturation process.

We began the maturation journey with two years in ex-Bourbon barrels, drawing out classic notes of creamy vanilla and toasted toffee.

The transformation occurred when the spirit moved to a wet Port cask. After an initial five-month soak, we pulled the liquid to perform a precision intervention: the barrel was shaved and given a heavy char before the rum was returned to its home.

Two additional years in this custom-charred Port cask have resulted in a spirit of remarkable complexity. Expect an initial burst of jammy port notes on the nose, followed by a palate of rich sun-dried raisins, dark berries, and a lingering hint of toasted toffee.
